"Harballs" Buffalo Chicken Sausage Meatballs
Makes: approx. 60 meatballs
For the sausage:
2 lb. ground chicken
1 lb. ground turkey
2 ts. garlic, chopped
2 ts. ground coriander
1 ts. chipotle powder
1 ts. fresh cracker pepper
½ cup buffalo style hot sauce (use your favorite!)
1 cup bread crumbs
2 eggs
3 ts. kosher salt
¼ lb. Blue cheese
For the Sauce:
1 ts. canola oil
2 ts. garlic, chopped
½ cup hot sauce
¼ cup honey
2 ts. Butter
1. Combine all ingredients in a mixer with paddle attachment and mix until all ingredients are fully incorporated. Let rest overnight or at least 2hrs.
2. Roll blue cheese into small marble-sized balls.
3. Take an ounce of the sausage, flatten into a small patty, place the blue cheese in the center and wrap the sausage around to form a meatball. Chill for 15-20 minutes.
4. To make the sauce, heat the canola oil in a small sauce pot, add garlic and lightly toast, add hot sauce, honey and bring to a simmer. Remove from heat and whisk in butter. Keep warm.
5. Dust the meatballs in semolina flour and fry at 350 F. Drain on a rack or a towel.
6. Tolls Harballs in sauce and serve with carrots, celery and blue cheese dressing.
